This turkey enchilada casserole recipe makes dinner time super easy, and it tastes great! I love Mexican food and I think I have rubbed off a little on my family with this turkey enchilada bake.

Enchiladas are one of my favorites, but I don’t always have enough time to make them at home. How do you combine enchiladas with convenience? In a casserole dish!

A ground turkey enchilada casserole bake you’ll love

We love enchiladas and wish we could make the all the time, but we just don’t have enough hours in the day. I am able to simplify meal prep and cook times by using canned corn, black beans, and enchilada sauce to make quick and easy turkey enchilada casserole for the whole family! In just 45 minutes, which is 15 minutes of prep time and 30 minutes of baking time, a piping hot dinner will be served.

Turkey Enchilada Casserole Recipe

This enchilada casserole bake meal is something I have been making for years. It is healthy, tasty, mostly hands-off, and it never fails the budget! Here’s how to make it:

Ingredients for ground turkey enchiladas:

  • Ground turkey
  • Taco seasoning
  • Enchilada red sauce (mild or hot, pick your flavor!)
  • Black beans
  • Corn
  • Cilantro
  • Onion
  • Cheddar cheese
  • Corn tortillas

Optional enchilada garnish:

  • Green onions
  • Sour cream

Step 1 – Prep the enchilada casserole: 10 min

Preheat your oven to 375 degrees. Brown your ground turkey and season with your favorite mix of spices. I use the McCormick Taco Seasoning Mix packet, it has great flavor! Combine ground turkey, 1 cup enchilada sauce, black beans, corn, cilantro, onion, and 1/2 cup cheddar cheese in a mixing bowl. Set aside.

Step 2 – Layer the turkey casserole ingredients: 5 min.

Lightly grease a casserole dish or 9 x 13 in a baking dish, I use an olive oil spray. Lay 6 of the tortillas along the bottom of the dish, spread and lay them evenly and be sure they are covering the entire bottom. Spread 1/2 cup of enchilada sauce over the top of the tortillas, then add 1/2 of the meat mixture.

Spread evenly until flat across the whole dish. Repeat these layering steps once more: the 6 tortillas, the remaining sauce, and the remaining meat mixture. Cover the top of the casserole with the rest of the cheddar cheese, 1 – 1/2 cups.

Step 3 – Bake your enchilada casserole dish: 30 min.

Cover the casserole with foil, slightly tented so that the cheese on top does not stick. Bake in the oven for 30 minutes. Now you can actually do stuff. Like clean. Or watch your favorite show. Maybe even exercise a bit? DING! That’s the oven timer, get back here!

Once the turkey enchilada bake is finished, turn off the oven, remove the foil, and let the casserole stand for another 5 minutes in the oven. You can serve this right away, but it will be messy. I’d go with a little extra optional cooling time, 10 minutes or so will do.

  • 1 15.5 oz. can of corn
  • 2 cups cilantro diced
  • 1 small onion diced
  • 2 cups shredded cheddar cheese
  • 12 6″ corn tortillas

Garnish (optional)

  • Sour cream
  • Green onions diced

Instructions
 

  • Preheat oven to 375 degrees. Brown ground turkey in a skillet and season with the taco seasoning or your favorite mix of spices.

Note: Using a 13 x 9″ baking dish, I was able to cut the casserole into 12 decent sized squares. They measured about 3 x 4″, and about 2″ deep.
