Blueberry Pancake Bites Recipe

It’s a miracle if my kids get up the first time I wake them, which means we tend to be racing out the door 4 out of 5 school days per week. I am in the process of installing a family command center so that we are better organized and have everything we need under control in one spot. We pre-pack lunches and pick out our clothes before bed, so the only thing left is to streamline breakfast!

Start making these muffin tin pancakes

When you make pancake bites with pancake mix, it makes it so much easier for a recipe! To start, pre-heat your oven to 350 degrees, measure out all ingredients, and get ready to start this easy breakfast idea.

Lightly grease the cups of a 12 count muffin pan, set aside. In a mixing bowl, add pancake mix, water, maple syrup, and vanilla extract, and stir until pancake batter is nice and smooth. Add blueberries, gently folding them into the batter until they are all coated.

Fill your muffin tin with pancake batter and bake

Pour pancake batter evenly into each muffin tin cup and bake at 350 degrees for 16-20 minutes. Pancake bites should be brown around the edges and slightly brown on the tops of each pancake. Feel free to do a toothpick test to make sure they are all finished in the middle.

They reheat well, I warm them for about 30 seconds in the microwave each morning, add a little more maple syrup to the bottom of a zipper bag, and put the pancake bites inside for dipping. My kids love it!
