I am already pretty good about eating well, but it can be a struggle to get the kids to follow suit. Now that it’s football season, and the holidays are right around the corner, I will have to try harder than ever to stay on track. I am into trying new things in the kitchen, and this citrus cranberry salad was a hit! Can you guess what i’m bringing to our next football tailgate party? This:
This baby is full of all of the essentials: mixed greens, avocado, cranberries, and orange segments, to name a few. A light salad like this needs a complimentary light dressing, so we made our own vinaigrette at home using one special ingredient: Florida Orange Juice. Orange juice in your daily diet is a great way to maintain a healthy lifestyle. I found this recipe for a citrunette vinaigrette on Florida Citrus website and couldn’t wait to try it!
Tailgate season is here, so bring this tasty and health dish to the next one! Here’s how to make it…
Citrus Cranberry Salad with Homemade Citrunette Vinaigrette
The Salad:
- 4 hand fulls mixed greens
- 1/2 cup cranberries
- 1/4 cup feta cheese
- 1/2 avocado, diced
- 1/4 cup red onion, sliced
- 1 whole orange, segmented
The Vinaigrette:
- 1/2 cup Florida Orange Juice
- 1/4 cup vinegar
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon garlic salt
- 1/4 teaspoon black pepper
The super easy instructions:
Combine all ingredients, the salad in one bowl and whisk together the vinaigrette in another bowl. Toss the salad, slowly adding the citrunelle vinaigrette until you achieve the desired amount. Serve and enjoy!
The next time you’re headed out a tailgate party to root for your favorite team, you’ve got to bring this salad. There are so many ways to cook with orange juice, and with it’s abundance of vitamin C and it’s equivalency to a cup of fruit, it’s a great way to get your quota in for the day! To get into the spirit of game day, here’s an orange juice marinade recipe that you can use:
Florida Orange Marinade
Recipe: Florida Department of Citrus
Combine all ingredients in bowl, mix thoroughly. Pour marinade over chicken skewers, cover and refrigerate at least three hours or preferably overnight.
Ingredients:
- ¼ cup 100% Florida Orange Juice
- 1 tbsp. lime juice
- 1 tbsp. jerk seasoning
- 1 tsp. ginger, minced

A large turf was laid out, and the event attracted thousands to try a football toss game, sit in the bleachers, take an #OJselfie, and try samples of 100% Florida Orange Juice.
