This month, we’re making homemade pumpkin puree, a fall favorite! This post is part of a sponsored post series for the #SweetNLowStars program. Check it out!
Have you caught the pumpkin craze bug yet?
I sure have! Fall is the season for all-pumpkin-everything, and I love it so. I have always wanted to try to make fresh homemade pumpkin puree for recipes, I had a few small pumpkins that we’re going to paint and decided that I would give it a shot.
We have been using Sweet’N Low to make delicious, guilt-free drinks and treats. To continue with the theme, we wanted to try something with a favorite that is right on time for the fall season: PUMPKIN.
Turns out, homemade pumpkin puree is super easy. Just cut and bake and blend, and you’ve got yourself a bunch of pumpkin-y goodness in no time! There are so many uses for pumpkin, anyone for pumpkin pie, muffins, or pumpkin cheesecake? Maybe pumpkin smoothies, lattes, or a pumpkin cider?
Easy Homemade Pumpkin Puree
yields 1 cup of puree
- 1 small pumpkin
- 2 tbsp. water
- 2 packets Sweet’N Low (or 1/2 cup sugar)
Preheat oven to 350 degrees.
Start by cutting your small pumpkin in half. You may have to cut off the top first.
Next, scoop out the seeds and strings the best you can. Once that’s complete, cut each half, in half, to make 4 quarters.
Place pumpkin quarters face up on a baking sheet and bake for 30 minutes. Remove from oven and allow to cool. The skin should be somewhat hard and the flesh should be nice and soft.
Take a spoon and remove all of the flesh from each quarter of the pumpkin.
Put the pumpkin flesh, water and Sweet’N Low into a blender, food processor, or other machine and puree until smooth.
You don’t have to sweeten it right away, but I do so that it’s ready for use. I chose to use Sweet’N Low as a diabetic friendly and calorie-free option that tastes great! Guiltless food and drinks are a no-brainer. If you don’t want to add any sweetener to the pumpkin puree, make sure you have Sweet’N Low on hand for your pumpkin-inspired recipe.
