Grilled Chicken, Garlic and Basil Tortellini

Tis the season to… grill!

It’s National Grilling Month, so it is only right that I share a grilling recipe that is a little different than the traditional steak and veggies. Admittedly, I had not fired up my grill this summer until last week. It’s been pretty hot, so I had to wait until the sun went down before I got started on this recipe! There’s nothing like an all in one dish that the whole family loves, complete with everything in it. I have made many variations of grilled chicken pasta over the years, but this one is a favorite.


Grilled Chicken, Garlic and Basil Tortellini

The chicken:

Marinade chicken breasts in 1/2 cup Pompeian olive oil and 1 clove of minced garlic. Place in the refrigerator for about an hour. Fire up your grill to medium high heat. Remove the chicken from the marinade, season with salt and pepper to taste, and grill on each side for a few minutes until cooked thoroughly. When cool enough to touch, slice into strips and set aside.

The Pasta:

Boil the tortellini according to the package directions. Drain and set aside. In a skillet, combine a splash of olive oil, broccoli and the remaining garlic and saute over medium heat for 2-3 minutes, stirring occasionally. Turn off the burner and stir in the chicken, tomatoes, basil, and remaining olive oil.

Fold the tortellini into the mixture, season with a little more salt and pepper if you wish. Serve and top with parmesan cheese.

  • this looks really good! I agree, it’s been really hot so I haven’t been grilling as much as I want to since hubby works nights I can’t do it after dark lol. But that grilled chicken looks delish and it’s a nice twist on the traditional steak, chops, burgers, etc… that you grill because the recipe has pasta too.
