Vanilla Cinnamon French Toast Casserole

The hustle and bustle of the school season has hit us, hard.

Along with shuffling the kids around to and from school and other activities, taking care of the household, and writing this blog, I have the pleasure of working full time. By the time I get home, it’s nearly 6pm and I am ready to call it a night! Since we are not in a position to hire a full time chef or to order out every night, quick meals are a must for dinner.


Baked Vanilla Cinnamon French Toast Casserole


We are all about breakfast for dinner around here, so this breakfast casserole dish is perfect for those nights that you just need to get something on the table. I tend to prep everything the night before to save time the next evening. One thing that I can’t really do in advance is buttering the dish, so I use Country Crock spread. It is creamy enough to use right out of the refrigerator, so all I really have to do is throw it all together and pop it into the oven. Country Crock’s Original Spread has less fat and calories than regular butter, no cholesterol or trans fats and tastes great.

When you need a quick fix for dinner, casseroles are it! Try it, it’s delicious and uses most of the ingredients you already have in your pantry. Scramble up some eggs while it’s in the oven and slice up some fresh fruit, we love it!


Bread and Country Crock Spread


Vanilla Cinnamon French Toast Casserole




Preheat your oven to 375 degrees and lightly coat a 9 x 13 inch baking dish with your favorite non-stick spray. Be sure your french bread is cut into cubes!

In a large mixing bowl, combine eggs, vanilla, cinnamon, nutmeg, and milk. Whisk together and refrigerate.

In a another mixing bowl, combine the brown sugar and Country Crock Spread, stirring until completely mixed together. It should look like a crumbly strudel. Sprinkle half of this brown sugar mixture on the bottom of your baking dish, then top with your bread cubes, spreading each layer evenly across the dish. Pour the egg mixture over the bread, making sure to soak each piece of bread the best you can. Crumble the remaining brown sugar mixture over the top of the casserole, not it’s read to bake!

Pop this lovely dish in your oven for about 45 minutes. While it cooks, you can totally catch up on whatever needs to be done around the house that evening.


Let me forewarn you about something: the baking of this dish produces such a lovely smell that it will flow through your house and make you hungrier than ever! You can also make this recipe to-go by using a cupcake pan to bake individual french toast cups. Quite an easy fix for mornings! Hope you enjoy!
