Summer is coming to a close, but it’s still HOT. The dog days of summer are here (in San Diego, at least) and we’re keeping cool however we can!
We love watermelon and it’s priced quite nicely these days, so I bought one the size of Big Foot’s head. I remembered this awesome salad that I tried at the True Food Kitchen in San Diego. Delicious, simple, healthful.
MUST RECREATE!
So I did. Behold…
Watermelon Tomato Salad
Ingredients:
- 2 cups watermelon, cubed
- 2 cups Sunburst cherry tomatoes (or heirlooms)
- 1 cup feta cheese
- 1 handful of fresh basil leaves
Simply arrange the watermelon cubes and tomatoes onto a serving dish, sprinkle with feta cheese and basil leaves. That’s it! There is zero cooking to do and not much prep involved. The above measurements made about 4 servings, but you can alter them as you please.
The taste? Divine.
This salad is family approved, my kids scarfed it down! Light and healthy, I have no problem with my children indulging in this type of sweetness.
