Southwest Black Bean and Corn Salad
This Southwestern black bean and corn salad recipe is the perfect starter or side dish for your barbecues and parties!

- 1 16 oz. can S&W Beans organic black beans
- 1 16 oz. can corn
- 1/2 cup red quinoa cooked
- 1/2 cup cherry tomatoes halved
- 1/4 cup cilantro diced
- 1 whole lime juiced
- 1 clove garlic minced
- 1/4 cup onion minced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. cumin
- 1/8 tsp. chili powder
In a large bowl, combine black beans, corn, quinoa, tomatoes, and cilantro. Mix well and set aside.
In another small bowl, combine lime juice, garlic, onion, and all spices. Stir until well combined.
Add the lime juice mixture to the black bean mixture in the large bowl. Mix it all together and serve.
