Southwest Black Bean and Corn Salad

This Southwestern black bean and corn salad recipe is the perfect starter or side dish for your barbecues and parties!

Ingredients
  

  • 1 16 oz. can S&W Beans organic black beans
  • 1 16 oz. can corn
  • 1/2 cup red quinoa cooked
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup cilantro diced
  • 1 whole lime juiced
  • 1 clove garlic minced
  • 1/4 cup onion minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. cumin
  • 1/8 tsp. chili powder

Instructions
 

  • In a large bowl, combine black beans, corn, quinoa, tomatoes, and cilantro. Mix well and set aside.
  • In another small bowl, combine lime juice, garlic, onion, and all spices. Stir until well combined.
  • Add the lime juice mixture to the black bean mixture in the large bowl. Mix it all together and serve.
