Ingredients

  • 4 strips of bacon crispy
  • 1 lb. fresh Brussels sprouts about 4 cups
  • 1 clove garlic minced
  • 1/8 cup red onion diced
  • 1/2 cup dried cranberries
  • 1 tbsp. brown sugar
  • 1 tbsp. extra virgin olive oil
  • salt and pepper to taste
  • splash of balsamic vinegar

Instructions

  • Heat a large skillet over medium-high heat. Fry bacon strips until crispy.
  • Rinse Brussels sprouts in warm, salted water in a large bowl, and let them sit for about 5 minutes. Rinse with cool water and allow to drain completely. Chop them up into quarters so that they cook faster.
  • Chop up garlic and red onion. If you have time, pre-measure the rest of your ingredients so they are ready for the next step.
  • Drain bacon strips on a paper towel, let them cool, and crumble the bacon into pieces. DO NOT GET RID OF THE BACON GREASE. Leave it in the pan.
  • Re-heat the large bacon grease skillet to medium heat. Add garlic, red onion, cranberries, brown sugar, and olive oil to the bacon grease in the pan. Saute the mixture until all ingredients are combined, then add Brussels sprouts, bacon crumbles, salt, pepper, and balsamic vinegar.
  • Reduce heat to low, cover, and simmer for 15-20 minutes, stirring once about halfway through.
