Thyme, Sweet Potato & Scrambled Eggs Hash Recipe

  • 6 eggs
  • 2 tbsp. extra virgin olive oil
  • 2 cloves of garlic minced
  • 1/2 cup chopped onion
  • 2 cups diced sweet potato
  • 2 cups chopped kale
  • 1 tbsp. fresh thyme minced and divided
  • salt and pepper
  • avocado optional garnish


  • Warm the olive oil to medium heat in a large skillet. Add garlic and onion, saute for 3-5 minutes or until slightly browned. Stir in sweet potato, kale, and half of the fresh thyme. Season with salt and pepper as desired, mix well, allowing the mixture to cook for 3-5 minutes.
  • While the sweet potato mixture is cooking, lightly scramble your eggs in a separate pan, season them lightly if desired, and set them aside.
  • Stir the sweet potato hash mixture once more, making sure everything is well combined. Turn the heat to low, cover, and simmer for 10 minutes, or until potatoes are done. 
  • Top skillet with scrambled eggs, the remaining fresh thyme, and avocado slices. Divide this breakfast hash onto 4 plates and serve.
