Cranberry chocolate chip energy bites recipe
These no-bake cranberry chocolate chip energy balls are full of wholesome, healthy ingredients and make a great protein-packed snack!
- 2 cups raw oats
- 1 cup flaked coconut
- 1 tbsp. chia seeds
- 1/2 cup carob chips or chocolate chips of your choice
- 1/2 cup dried cranberries
- 1 cup almond butter
- 2/3 cups raw honey
- 2 tsp. vanilla
Combine all dry ingredients - oats, coconut, chia seeds, cranberries, and chocolate chips - in a large mixing bowl.
Stir in the remaining wet ingredients and mix well. Refrigerate the mixture for 15 minutes to set.
Scoop out a teaspoon full of the mixture and roll into a ball with your hands, setting the chocolate chip energy balls onto a clean plate as you go.
Serve immediately and refrigerate leftover energy balls.
