Homemade Turkey Noodle Soup Recipe

- 1 tbsp olive oil
- 1 cup onion diced
- 1 cup celery diced
- 1 cup carrots sliced
- 1 tbsp garlic minced
- 4 cans chicken broth 56 oz.
- 1 can water 14 oz.
- 1 tbsp parsley dried (or fresh) + 1/2 tsp
- 1 tsp thyme dried
- 1 tsp oregano dried
- 2 tsp salt
- 2 tsp pepper
- 1 lb shredded turkey fresh or frozen
- 2 cups pasta egg noodles are a favorite, we used rotini
Heat olive oil in a stockpot over medium heat. Add onion, celery, and carrots and stir to soften for about 4-5 minutes.
Stir in the garlic and add chicken broth and water. Turn the heat up to medium-high, bringing it to a boil.
Add 1 tbsp. parsley, thyme, oregano, salt, and pepper, and stir to combine all ingredients.
When the soup is boiling, add turkey and pasta noodles. Stir thoroughly, turn down the heat, cover, and simmer for about 10 minutes.
Ladle into bowls and top with a sprinkle of the remaining parsley.
