Homemade Turkey Noodle Soup Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 cup onion diced
  • 1 cup celery diced
  • 1 cup carrots sliced
  • 1 tbsp garlic minced
  • 4 cans chicken broth 56 oz.
  • 1 can water 14 oz.
  • 1 tbsp parsley dried (or fresh) + 1/2 tsp
  • 1 tsp thyme dried
  • 1 tsp oregano dried
  • 2 tsp salt
  • 2 tsp pepper
  • 1 lb shredded turkey fresh or frozen
  • 2 cups pasta egg noodles are a favorite, we used rotini

Instructions
 

  • Heat olive oil in a stockpot over medium heat. Add onion, celery, and carrots and stir to soften for about 4-5 minutes.
  • Stir in the garlic and add chicken broth and water. Turn the heat up to medium-high, bringing it to a boil.
  • Add 1 tbsp. parsley, thyme, oregano, salt, and pepper, and stir to combine all ingredients.
  • When the soup is boiling, add turkey and pasta noodles. Stir thoroughly, turn down the heat, cover, and simmer for about 10 minutes.
  • Ladle into bowls and top with a sprinkle of the remaining parsley.
