Bacon and Parmesan Hash Brown Potato Cakes
These savory potato cakes with bacon and cheese are an easy breakfast recipe to make that tastes wonderful!
1 large mixing bowl
1 large skillet
- 4 cups shredded potatoes fresh or frozen
- 4 slices bacon cooked and chopped
- 1 cup parmesan cheese shredded
- 1 egg
- 1 cup green onions set a little aside for garnish
- 1 clove garlic minced
- 1 tsp. thyme ground or fresh
- 1 tbsp. olive oil
- salt and pepper to taste
- sour cream optional
In a large mixing bowl, combine potatoes, parmesan cheese, garlic, green onions, and spices. Mix thoroughly, then gently stir in the bacon, then the egg, coating the entire mixture.
Heat a large skillet over medium-high heat, add olive oil. When it’s warm, scoop the potato mixture into the skillet, making little haystacks. Cook each for 5 – 6 minutes, then flip them and smash them down flat.
When finished, remove potato cakes from the skillet, plate them, and garnish with sour cream and the extra green onions.
