Prep Time 5 minutes mins
Total Time 5 minutes mins
4 8 oz. serving glasses
1 Mixing bowl
- 2 cups pumpkin puree
- 2 tbsp. maple syrup
- 1 tsp. pumpkin pie spice + a little extra for garnish
- 2 cups plain Greek yogurt
- 1/2 cup graham crackers crushed
- 1/8 cup pecans chopped (or granola)
Gather all of your ingredients and materials. In a small mixing bowl, combine the pumpkin puree, maple syrup, and pumpkin spice and mix well. Set it aside.
Mix Greek yogurt in its own container until it is nice and creamy.
To begin the layering process, add 1/4 c. of the pumpkin mixture to the bottom of each of the 4 glasses (a total of 1 cup, or half of the pumpkin mixture), spreading it evenly at the bottom so it is flat and touches all sides of the glass.
Next, carefully add 1/4 c. of the Greek yogurt to each glass, again spreading it nice and evenly. Repeat this process once more, adding another layer of pumpkin, followed by another layer of Greek yogurt.
Garnish the tops of the pumpkin yogurt parfaits with graham cracker crumbs and pecans. You can add a small dash of pumpkin spice on the top of each pumpkin parfait. Stick a spoon in each glass and serve!
