One-Pot Chicken and Sausage Chili Pasta Recipe

This one-pot chicken chili pasta with sausage is such a warm, hearty and delicious comfort food to make for your family this fall.

Ingredients
  

  • 1 lb. Foster Farms Simply Raised Chicken Breast cubed
  • 2 tbsp. butter
  • 1 small onion chopped
  • 1 clove garlic minced
  • 1 lb. smoked sausage sliced
  • 1 - 28 oz. can diced tomatoes
  • 1 - 8 oz. can tomato paste
  • 2 cups chicken broth
  • 1 - 16 oz. can kidney beans
  • 1 cup large elbow noodles
  • Seasonings 1 tbsp. chili powder, 2 tsp. cumin, 2 tsp. oregano, 2 tsp. salt, 2 tsp. pepper, 1 tsp. thyme
  • Optional toppings: cheddar cheese, green onions

Instructions
 

  • In a large skillet, melt butter in your skillet over medium heat, and saute onion, garlic, and chicken breast cubes. Stir for 3 -5 minutes until chicken is slightly browned.
  • Add remaining ingredients into the pot – sausage, diced tomatoes, tomato paste, chicken broth, kidney beans, elbow noodles, and seasonings – stir to combine. Ensure that all ingredients are submerged under the liquid. If they are not, add an extra 1/2 cup of chicken broth until they are. Turn up the heat to high and bring mixture to a boil.
  • Once it’s boiling, reduce the heat to low, stir once more, cover, and simmer for about 10-15 minutes. Ladle into bowls and serve with shredded cheddar cheese and green onions.
