Equipment

  • 1 9x9 baking pan
  • Large and small mixing bowls

Ingredients

Stone fruit mixture

  • 4 cups fresh stone fruits peaches, plums, nectarines, cherries (pitted & sliced)
  • 1/2 c sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch

Crumble topping

  • 1 c flour
  • 3/4 c sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • pinch of salt
  • 6 tbsp butter melted
  • vanilla ice cream optional

Instructions

  • Preheat your oven to 350 degrees F. In a large mixing bowl, combine stone fruits, sugar, and lemon juice. Next, add the cornstarch and mix until thoroughly combined.
  • Lightly grease the bottom of the 9x9" pan with cooking spray. Pour the stone fruit mixture into the baking pan and set aside.
  • For the crumble topping, combine dry ingredients in a small bowl – flour, sugar, baking powder, cinnamon, and salt. Mix well, then add the melted butter and stir gently until you get a nice, crumbly texture.
  • Spread the crumble topping evenly over the stone fruit mixture in the baking pan, making sure to cover up most of the top of the fruit. Bake the stone fruit dessert for about 30-40 minutes, or until the top of the crumble is golden brown.
  • To brown the top a little more, turn off the oven and fire up the broiler on high, and broil the crumble-topped fruit cobbler for 2-3 minutes, or until you achieve the desired level of browning and crisped top.
  • Remove from the oven and cool for about 5-6 minutes. Spoon warm stone fruit crumble into bowls and top with vanilla ice cream to serve.
