Easy Chorizo Frittata Recipe in a Skillet

This delicious chorizo and egg skillet uses vegetables and herbs to make a fresh and healthy breakfast frittata.

Equipment

  • 1 Cast iron skillet

Ingredients
  

  • 12 eggs or 1 carton of All White Egg Whites
  • 1 cup chorizo
  • 1/4 cup red onion sliced
  • 1/2 large heirloom tomato sliced
  • 1/2 cup fresh spinach diced
  • 1/8 cup fresh mixed herbs I used basil, parsley, oregano cilantro
  • 1/8 cup crumbled feta cheese
  • salt and pepper

Instructions
 

  • Preheat your oven to 325 degrees. Grease cast-iron skillet and saute chorizo and red onion for 2-3 minutes on the stovetop over medium heat.
  • Remove from heat, and spread the chorizo and onion mixture evenly on the bottom of the pan. Add your spinach, layer tomato slices over the top, then sprinkle with herbs.
  • Pour the AllWhite® Egg Whites into the skillet over the top and sprinkle with salt and pepper to taste.
  • Put the skillet in the oven and bake for 25-30 minutes. When the chorizo frittata recipe is finished, remove from the oven and cool for 10 minutes.
  • Sprinkle feta cheese on top of the frittata, slice, and serve.
