Easy Chorizo Frittata Recipe in a Skillet
This delicious chorizo and egg skillet uses vegetables and herbs to make a fresh and healthy breakfast frittata.

- 12 eggs or 1 carton of All White Egg Whites
- 1 cup chorizo
- 1/4 cup red onion sliced
- 1/2 large heirloom tomato sliced
- 1/2 cup fresh spinach diced
- 1/8 cup fresh mixed herbs I used basil, parsley, oregano cilantro
- 1/8 cup crumbled feta cheese
- salt and pepper
Preheat your oven to 325 degrees. Grease cast-iron skillet and saute chorizo and red onion for 2-3 minutes on the stovetop over medium heat. Remove from heat, and spread the chorizo and onion mixture evenly on the bottom of the pan. Add your spinach, layer tomato slices over the top, then sprinkle with herbs.
Pour the AllWhite® Egg Whites into the skillet over the top and sprinkle with salt and pepper to taste.
Put the skillet in the oven and bake for 25-30 minutes. When the chorizo frittata recipe is finished, remove from the oven and cool for 10 minutes.
Sprinkle feta cheese on top of the frittata, slice, and serve.
