Italian Kale Salad with Salami Recipe

- 3 cups fresh kale diced
- 10 slices Italian dry salami diced
- 1 handful cherry tomatoes halved
- 1 cup S&W canned garbanzo beans drained
- 1/2 cup shredded parmesan
- 2 tbsp. Italian dressing
In a shallow baking dish, coat garbanzo beans with olive oil and sprinkle a little salt over all of the beans. Roast for about 15 minutes or until crispy, stirring occasionally. Set aside to cool.
In a large mixing bowl, combine kale, sliced salami, parmesan cheese, garbanzo beans, and Italian dressing. Toss until well-mixed.
Top with a few cherry tomatoes and another sprinkle of parmesan cheese and serve.
