Kale Salami and Roasted Garbanzo Bean Salad

Italian Kale Salad with Salami Recipe

Ingredients
  

  • 3 cups fresh kale diced
  • 10 slices Italian dry salami diced
  • 1 handful cherry tomatoes halved
  • 1 cup S&W canned garbanzo beans drained
  • 1/2 cup shredded parmesan
  • 2 tbsp. Italian dressing

Instructions
 

  • In a shallow baking dish, coat garbanzo beans with olive oil and sprinkle a little salt over all of the beans. Roast for about 15 minutes or until crispy, stirring occasionally. Set aside to cool.
  • In a large mixing bowl, combine kale, sliced salami, parmesan cheese, garbanzo beans, and Italian dressing. Toss until well-mixed.
  • Top with a few cherry tomatoes and another sprinkle of parmesan cheese and serve.
