Course Breakfast, Dessert
- 1/4 c butter softened 1/2 stick
- 1/2 c sugar
- 1 ripe banana, mashed
- 1 egg
- 7/8 c flour a little less than 1 cup
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1/8 tsp cinnamon
- 1/2 c semi-sweet choc chips plus a little extra for the tops
Preheat the oven to 350 degrees. Line or grease your 12-count muffin tin.
In a large mixing bowl, combine the softened butter and sugar and cream the ingredients together. Then, add the mashed banana and egg and mix all ingredients.
Add flour, baking soda, salt, and cinnamon to the bowl. Stir all of the ingredients together until they are just combined - do not overmix.
Add semi-sweet chocolate chips to the bowl and fold them in gently. Scoop the batter into your greased/lined muffin tin, filling each cup about 2/3 of the way full.
Add additional chocolate chips to the tops of the batter of each muffin.
Bake muffins for 22-25 minutes, or until golden brown on the tops and thoroughly done in the center. Allow 8-10 minutes for the banana muffins to cool, then carefully remove each muffin from the tin and serve warm.
