Easy Farmer's Breakfast Casserole Recipe
This baked farmer's casserole breakfast uses hash browns, eggs, and ham, and is a delicious and hearty breakfast bake that the whole family will love.

- Nonstick cooking spray
- 3 cups frozen shredded hash brown potatoes
- 3/4 cup shredded Monterey Jack cheese
- 1 cup diced cooked ham you can also try cooked breakfast sausage or Canadian bacon
- 2 green onions sliced
- 4 eggs beaten
- 1 1/2 cups milk
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 2 jalapenos (optional) seeded and chopped
Pre-heat your oven to 350 F.
Spray an 8x8-inch square baking dish with nonstick cooking spray. Add your layer of hash browns and spread them out evenly on the bottom of the casserole dish.
Sprinkle jack cheese, diced ham (or other breakfast meat), and green onions over the top of the hash browns.
Add eggs, milk, salt, pepper, and jalapenos to a mixing bowl and stir until combined. Pour the egg mixture over the hash brown mixture in the casserole dish.
Bake the breakfast casserole uncovered for about 50-55 minutes, or until a toothpick or knife inserted in the center of the dish comes out clean.
Let your baked breakfast dish stand for about 5 minutes before serving.
