Easy Farmer's Breakfast Casserole Recipe

This baked farmer's casserole breakfast uses hash browns, eggs, and ham, and is a delicious and hearty breakfast bake that the whole family will love.

Ingredients
  

  • Nonstick cooking spray
  • 3 cups frozen shredded hash brown potatoes
  • 3/4 cup shredded Monterey Jack cheese
  • 1 cup diced cooked ham you can also try cooked breakfast sausage or Canadian bacon
  • 2 green onions sliced
  • 4 eggs beaten
  • 1 1/2 cups milk
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 jalapenos (optional) seeded and chopped

Instructions
 

  • Pre-heat your oven to 350 F.
  • Spray an 8x8-inch square baking dish with nonstick cooking spray. Add your layer of hash browns and spread them out evenly on the bottom of the casserole dish.
  • Sprinkle jack cheese, diced ham (or other breakfast meat), and green onions over the top of the hash browns.
  • Add eggs, milk, salt, pepper, and jalapenos to a mixing bowl and stir until combined. Pour the egg mixture over the hash brown mixture in the casserole dish.
  • Bake the breakfast casserole uncovered for about 50-55 minutes, or until a toothpick or knife inserted in the center of the dish comes out clean.
  • Let your baked breakfast dish stand for about 5 minutes before serving.
