Homemade Blueberry Lemon Loaf Recipe
This lemon and blueberry loaf recipe uses fresh blueberries and lemon zest for a delicious, homemade lemon blueberry bread treat.

For the lemon blueberry loaf
- 1½ cups flour unpacked
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup Greek yogurt or a 5.3 oz. container
- 1/2 cup extra-virgin olive oil + 1/2 tsp
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup sugar
- 4 tsp lemon zest
- 2 cups blueberries
For the lemon glaze recipe
- 1 cup powdered sugar
- 3 tsp lemon juice
- 1 tsp lemon zest
Preheat oven to 350 degrees and use the 1/2 tsp olive oil to grease the inside of the loaf pan.
In a small mixing bowl, combine flour, baking powder, and salt. Set aside.
In your large bowl, combine Greek yogurt, olive oil, eggs, vanilla, sugar, and lemon zest. Mix until just combined.
Slowly add the flour mixture to the large bowl, mixing as you go.
Carefully fold the blueberries into the batter and pour into oil-greased loaf pan.
Bake your lemon loaf with blueberries for about 45 minutes, or until slightly brown on the top and edges and a toothpick comes out dry.
To make the lemon glaze, take your small mixing bowl and add the powdered sugar and lemon juice. Mix well.
When your loaf has slightly cooled, drizzle glaze on the top of the blueberry lemon loaf and allow it to set for 5-10 minutes. Slice & serve!
