One-Pot Chicken and Sausage Chili Pasta Recipe

- 1 lb. Foster Farms Simply Raised Chicken Breast cubed
- 2 tbsp. butter
- 1 small onion chopped
- 1 clove garlic minced
- 1 lb. smoked sausage sliced
- 1 - 28 oz. can diced tomatoes
- 1 - 8 oz. can tomato paste
- 2 cups chicken broth
- 1 - 16 oz. can kidney beans
- 1 cup large elbow noodles
- Seasonings 1 tbsp. chili powder, 2 tsp. cumin, 2 tsp. oregano, 2 tsp. salt, 2 tsp. pepper, 1 tsp. thyme
- Optional toppings: cheddar cheese, green onions
In a large skillet, melt butter in your skillet over medium heat, and saute onion, garlic, and chicken breast cubes. Stir for 3 -5 minutes until chicken is slightly browned.
Add remaining ingredients into the pot – sausage, diced tomatoes, tomato paste, chicken broth, kidney beans, elbow noodles, and seasonings – stir to combine. Ensure that all ingredients are submerged under the liquid. If they are not, add an extra 1/2 cup of chicken broth until they are. Turn up the heat to high and bring mixture to a boil.
Once it’s boiling, reduce the heat to low, stir once more, cover, and simmer for about 10-15 minutes. Ladle into bowls and serve with shredded cheddar cheese and green onions.
