Apple Oatmeal Bars
Who loves a good fall apple recipe? I was working with Quaker on an Instagram post about the goodness of oats, and how I love to include them in my daily routine (here’s the Instagram post).
These apple and oat bars are a delicious super grain that can be enjoyed in a variety of different ways, and packed with fiber and other nutritional goodness. I decided to try an apple oatmeal bars recipe using some of the apples I had at home and I love how it turned out!

Ingredients needed for these oat and apple bars:
- flour (I a use gluten-free, 1-to-1 flour blend)
- old fashioned oats
- brown sugar
- salt
- baking soda
- cinnamon
- nutmeg
- butter
- fresh apples
The apple oatmeal bars recipe
Ok, so get started by pre-heating your oven to 350 degrees. Line the inside of your 13 x 9 baking dish with foil or parchment paper and spritz with cooking spray to prevent sticking.
To prep the crumble mixture for the apple oat bars, combine flour, oats, brown sugar, salt, baking soda, cinnamon, and nutmeg in a large bowl. Cut in 1 cup of butter (2 sticks, softened) and mix until nice and crumbly.
Layer apple bar ingredients into baking dish
Spread 1/2 of the crumb mixture onto the bottom of your foil-lined baking pan, and press lightly to cover the entire bottom. Add apple slices as the middle layer, spreading them out nice and even.
Top the apples with the remaining crumb mixture, spreading this into an even layer over the top of the apples. DO NOT press it down.
Bake this apple dessert and serve with a scoop of ice cream
Pour your 1/2 cup of melted butter evenly over the top of the dish and bake at 350 degrees for 30 minutes. Once they’re finished, allow them to cool for about an hour before attempting to remove the foil from the baking dish.

These apple cinnamon oatmeal bars came out so good, they were actually gone by the next day! This recipe is really warm and delicious, reminiscent of apple cinnamon-baked oatmeal.
I am making these for dessert on Thanksgiving and adding a dollop of whipped cream or vanilla bean ice cream. So, so good. Put those fall apples and healthful oats to use, you might end up loving what you created!
Apple Cinnamon Oat Bars
Equipment
- large mixing bowl
- 13 x 9 baking dish
- foil
- cooking spray
Ingredients
- 2 cups flour
- 1 ½ cup old fashioned oats
- 1 cup brown sugar
- 1 tsp. salt
- 1 tsp. baking soda
- ½ tsp. cinnamon
- ½ tsp. nutmeg
- 1 cup butter softened + 1/2 cup butter, melted
- 2 large apples thin sliced
Instructions
- Pre-heat oven to 350 degrees. Line 13 x 9 baking dish with foil and lightly coat with cooking spray
- Combine flour, oats, brown sugar, salt, baking soda, cinnamon, and nutmeg in a large bowl
- Cut in 1 cup of butter (2 sticks, softened) and mix until nice and crumbly
- Spread 1/2 of the crumb mixture onto the bottom of your foil-lined baking dish, press lightly to cover the entire bottom
- Add apple slices as the middle layer, spreading them out nice and even. Top the apples with the remaining crumb mixture, spreading this layer evenly over the top of the apples. DO NOT press it down.
- Pour your 1/2 cup of melted butter evenly over the top of the dish and bake at 350 degrees for 30 minutes
- Allow apple oat bars to cool for about an hour. Remove the foil from the baking dish and cut into 12 squares.
- Enjoy warm, and try them topped with vanilla ice cream!

Way too much butter. And too crumbly to eat as bars.
Do you think that I could cut back on the butter and they would still turn out fine? They look delicious but 3 sticks of butter for one pan of bars is a lot of butter.
It definitely will not be the same, but you can try using a healthier substitute? I have heard of people using bananas, avocado, Greek yogurt, pumpkin, applesauce, etc. FYI I have not tried these in this recipe and don’t know the correct ratios so please look further into it!
