Easy Make Ahead Blueberry Pancake Muffins
These blueberry pancake muffins are the answer! Did you know that you can make pancakes in a muffin tin? You totally can! My kids love pancakes, especially these brown butter whole wheat blueberry pancakes, but I just don’t have the time to make them each morning.
What I love about this quick and easy breakfast recipe is that they have fresh fruit, I can make them on a Sunday and they’ll last for a few days, and they are delicious and full of flavor! Make these blueberry muffins with pancake mix for your kids, you’ll thank me later š
Blueberry muffins from pancake mix
- Pancake mix (I love Krusteaz pancake mixes, fluffy pancakes that are super easy to make)
- Water (follow package directions, they may differ)
- Blueberries
- Maple syrup
- Vanilla extract
Start making these muffin tin pancakes
When you make pancake bites with pancake mix, it makes it so much easier for a recipe! To get started, preheat your oven to 350 degrees, measure out all ingredients listed on the pancake mix box, and get ready to start this easy breakfast idea.
Lightly grease the cups of a 12-count muffin pan, and set it aside. In a large mixing bowl, add pancake powder mix, water, maple syrup, and vanilla extract, and whisk together, stirring until the pancake batter is nice and smooth. Please note that you may need other ingredients according to your pancake box’s instructions, such as eggs, butter, salt, oil, etc.
Add the blueberries to the bowl and gently fold them into the batter until they are all coated.
Fill your muffin tin with pancake batter and bake
Pour pancake batter evenly into each muffin tin cup and bake at 350 degrees for 16-20 minutes. Your pancake mix muffins should be brown around the edges and slightly brown on the tops of each pancake. Feel free to do a toothpick test to make sure they are all finished in the middle.
Allow your blueberry pancake muffins to cool, then gently loosen each one and pop them out. The result: some of the most delicious, fluffy, and easy blueberry pancakes that are ready to take with you on the go!
They reheat well, I warm them for about 30 seconds in the microwave each morning, add a little more maple syrup to the bottom of a zipper bag, and put the pancake bites inside for dipping. If you have extras, I am sure you can put them in the freezer for a couple of months. My kids love these!

- 2 cups pancake mix I love Krusteaz pancake mixes, fluffy pancakes that are super easy to make
- 1 ā cups water follow package directions, they may differ
- 1 cup fresh blueberries
- 1 tbsp. maple syrup
- 1 splash of vanilla
Instructions
- To start, pre-heat your oven to 350 degrees, measure out all ingredients.

You should be able to, as long as you know how to alter the cook times.
You can! 4 cups of all-purpose flour
3 tablespoons of baking powder
2 teaspoons of baking soda
1 teaspoon of salt
3 tablespoons sugar
And how to make them
1 cup of pancake mix that you made
1 egg
1 cup milk
1 tablespoon of MELTED butter (or) oil š

I made some this morning using raisins! I didn’t have any blueberries, I made 4 raisin, 4 chocolate chip and 4 plain.

Ji made these muffins with bisquick mix and added 2 eggs and a cup of milk per their instructions. I then proceeded to add the syrup, vanilla and blueberries. I had to bake the muffins about 30 minutes to get a little browness on the top. They were very good but my husband said to add a little sugar to the batter next time, to make them sweeter. I will make again.
Mine didn’t really brown on the top either, mostly on the sides because I use a metal pan. As long as they are cooked through, they should be fine. Mine were just sweet enough with the Krusteaz pancake mix, but go ahead and add some sugar and let me know how it turns out!
I am going to make these as the breakfast garnish for the residents at the assisted living residence I work @. I think they will love them.

You use a regular size muffin pan ā not mini ???
Yes, I used a regular sized muffin pan. I am sure you could use a mini, you’d need to adjust baking times. Let me know how it turns out!

I just made this tonight for my 3 and 2 year old. They gobbled them up! This is exciting as I have picky eaters and work full time and this was so easy to make. I have extra for tomorrow morning. They’ll take them with them to school. I also plan to make them ahead during the week for an on-the-go breakfast. Anyone have any suggestion on how to prevent the blueberries from bursting? Half the muffins had purple on the bottom. Still yummy though (I ate two myself).
I coat the blueberries with a squeezed lemon and some sugar, just a little goes a long way! Helps them from sticking or bursting. š
You can use frozen blueberries. They should cook just enough without bursting.
