Blueberry Pancake Bites Recipe

It’s a miracle if my kids get up the first time I wake them, which means we tend to be racing out the door 4 out of 5 school days per week. I am in the process of installing a family command center so that we are better organized and have everything we need under control in one spot.

We pre-pack lunches and pick out our clothes before bed, so the only thing left is to streamline breakfast!

Start making these muffin tin pancakes

When you make pancake bites with pancake mix, it makes it so much easier for a recipe! To get started, preheat your oven to 350 degrees, measure out all ingredients listed on the pancake mix box, and get ready to start this easy breakfast idea.

Lightly grease the cups of a 12-count muffin pan, and set it aside. In a large mixing bowl, add pancake powder mix, water, maple syrup, and vanilla extract, and whisk together, stirring until the pancake batter is nice and smooth. Please note that you may need other ingredients according to your pancake box’s instructions, such as eggs, butter, salt, oil, etc.

Add the blueberries to the bowl and gently fold them into the batter until they are all coated.

Pour pancake batter evenly into each muffin tin cup and bake at 350 degrees for 16-20 minutes. Your pancake mix muffins should be brown around the edges and slightly brown on the tops of each pancake. Feel free to do a toothpick test to make sure they are all finished in the middle.

They reheat well, I warm them for about 30 seconds in the microwave each morning, add a little more maple syrup to the bottom of a zipper bag, and put the pancake bites inside for dipping. If you have extras, I am sure you can put them in the freezer for a couple of months. My kids love these!
