We’ve got to get ready for school and work in the morning, so it’s no question that we’re up early and occasionally rushing out of the house. When it comes to getting kids ready in the morning, there’s always an unexpected setback. “But I’m too tired to get up!” “I can’t find my shoes!” “Mom, I don’t like this oatmeal.” UGH.

We are always in search of quick, healthy, and delicious breakfast ideas, so I came up with an idea to make a bunch of healthy no-bake energy balls. We love recipes with dried cranberries, so this was totally worth a shot.
Cranberry chocolate chip energy bites recipe
Behold, my cranberry chocolate chip energy bites recipe! They are perfect little balls of goodness that carry a bunch of vitamins and minerals that are essential to getting your day started! These no bake energy balls are easy to make and tasty, too. Check out the recipe below.
Ingredients:
- Raw oats
- Coconut
- Chia seeds
- Carob chips (or chocolate chips of your choice)
- Dried cranberries
- Almond butter
- Raw honey
- Vanilla extract
How to make no bake energy balls
Making this dried cranberry and oat energy balls recipe is super simple. First, you’ll combine all of the dry ingredients in a large mixing bowl, then stir in the wet ingredients until thoroughly mixed. Refrigerate the mixture for 15 minutes.
Roll almond butter bites into balls
When it’s ready, scoop out a teaspoon full of the mixture and roll it into a ball, shaping it with your hands. Set the chocolate chip energy balls onto a clean plate as you go. That’s it! I was able to roll about 30 balls with this recipe, I really love how these taste.
Cranberry chocolate chip energy bites recipe
Ingredients
- 2 cups raw oats
- 1 cup flaked coconut
- 1 tbsp. chia seeds
- 1/2 cup carob chips or chocolate chips of your choice
- 1/2 cup dried cranberries
- 1 cup almond butter
- 2/3 cups raw honey
- 2 tsp. vanilla
Instructions
- Combine all dry ingredients - oats, coconut, chia seeds, cranberries, and chocolate chips - in a large mixing bowl.
- Stir in the remaining wet ingredients and mix well. Refrigerate the mixture for 15 minutes to set.
- Scoop out a teaspoon full of the mixture and roll into a ball with your hands, setting the chocolate chip energy balls onto a clean plate as you go.
- Serve immediately and refrigerate leftover energy balls.
