A healthy chorizo and eggs skillet
My family sure does love Sunday brunch! We love spending time together and lazy Sunday mornings are perfect to do just that! I will always have the memories we create, sleeping in, watching some fun cartoons, and gathering at the breakfast table are all cherished family moments.
Chorizo breakfast egg bake
We love a good breakfast recipe, and I do strive to serve tasty dishes that we’ll all love, but they’ve gotta be healthy, too. Low fat, low-calorie foods full of nutrients are so important, I have found that AllWhites Egg Whites make it easier for me to enjoy eggs for breakfast without removing and wasting the yolk.
We do eat regular eggs often, but sometimes, I crave an egg white omelete or scramble and don’t want to waste the yolks. AllWhites® are 100% liquid egg whites that come in a convenient carton, they’re a great fat-free, cholesterol-free, and low-calorie alternative to regular eggs.

I came across this recipe for Spinach and Feta Wraps on the AllWhites® website, it sounded so good that I had to try it at home! I thought, what if we could cut some of the calories by scrapping the tortilla wrap? After shuffling around some of the ingredients, I came up with a protein-packed, veggie-filled, egg-white chorizo frittata, and it was AH-MAZING!
Easy Chorizo Frittata Recipe in a Skillet
If you need recipes for frittatas in the oven, look no further than this chorizo sausage and egg skillet recipe, packed with vegetables and flavors you’ll love.
Ingredients:
- 12 eggs or AllWhites® Egg Whites carton
- soy chorizo (or your favorite kind)
- red onion
- Heirloom tomato
- fresh spinach
- fresh mixed herbs (I used basil, parsley, oregano cilantro)
- crumbled feta cheese
- salt and pepper
- Large cast-iron skillet
Step 1: Prep oven, saute the onion and the chorizo
Preheat your oven to 325 degrees. Grease a cast-iron skillet and saute chorizo and red onion for 2-3 minutes on the stovetop over medium heat. If your cast iron skillet is already seasoned, you may not have to grease it. Learn more about seasoning your cast iron skillet.
Step 2: Add vegetables, herbs, and eggs
Remove from heat, and spread the chorizo and onion mixture evenly on the bottom of the pan. Add your spinach, layer tomato slices over the top, then sprinkle with herbs. Pour the AllWhite® Egg Whites into the skillet over the top and sprinkle with salt and pepper to taste.
Step 3: Bake your cast iron skillet frittata
Next, pop your cast iron skillet in the oven and bake for 25-30 minutes. When the chorizo and vegetable frittata recipe is finished, remove from the oven and cool for 10 minutes. Sprinkle feta cheese on top of the frittata and serve. Will you look at this delicious masterpiece?

- 1 cup chorizo
- 1/4 cup red onion sliced
- 1/2 large heirloom tomato sliced
- 1/2 cup fresh spinach diced
- 1/8 cup fresh mixed herbs I used basil, parsley, oregano cilantro
- 1/8 cup crumbled feta cheese
- salt and pepper
Instructions
