Sunday Brunch: Soy Chorizo, Herb & Heirloom Tomato Skillet Frittata

My family sure does, we love spending time together and lazy Sunday mornings are perfect do do just that! I will always have the memories we create, sleeping in, watching some fun cartoons and gathering at the breakfast table are all cherished family moments.

I came across this recipe for Spinach and Feta Wraps on the AllWhites® website, it sounded so good that I had to try it at home! I thought, what if we could cut some of the calories by scrapping the tortilla wrap? After shuffling around some of the ingredients, I came up with a meatless, protein packed, veggie filled, egg white frittata, and it was AH-MAZING!  


Soy Chorizo, Herb and Heirloom Tomato Skillet Frittata



  • 1 16 oz. carton AllWhites® Egg Whites
  • 1 cup soy chorizo
  • 1/4 cup red onion, sliced
  • 1/2 large heirloom tomato, sliced
  • 1/2 cup fresh spinach, diced
  • 1/8 cup fresh mixed herbs (I used basil, parsley, oregano cilantro)
  • 1/8 cup Crystal Farms Crumbled Feta Cheese
  • salt and pepper
  • large cast iron skillet


Preheat your oven to 325 degrees. Grease skillet and saute chorizo and red onion in for 2-3 minutes on the stove top over medium heat.

Remove from heat, spread chorizo and onion mixture evenly on the bottom of the pan. Add your spinach, layer tomato slices over the top, then sprinkle with herbs. Pour the AllWhite® Egg Whites into the skillet over the top, sprinkle with salt and pepper and bake for 25-30 minutes. When it’s finished, remove from oven and cool for 10 minutes. Sprinkle feta cheese on top of the frittata and serve. Will you look at this delicious masterpiece?

I really like how this frittata turned out, lean protein from the AllWhite® Egg Whites paired with the flavor of chorizo, fresh vegetables and herbs make this complete and healthy meal! Serve with fresh fruit on the side, your family is in for a real treat.
