Wholesome Meals Made Easy: Hearty Chicken, White Bean and Kale Chili

 

What do you do when you want to provide a quality, home cooked meal for your family, but you’re pressed for time? Hearty Chicken, Kale and White Bean Chili Recipe

 

We have been so busy lately that I feel like we’re never home. Between school, work, baseball, travel, and all of life’s happenings, we’ve got so much on the schedule! The other night after a baseball game, we got home around 7pm. WHAT. TO. EAT. Ugh I had so many things to do before bedtime, so dinner had to be quick.

In the refrigerator, we had veggies, fruit, water, Foster Farms® chicken breast, and a few other odds and ends, along with a few staples in the pantry, so I took out a few things and made soup. Boil, shred, season, stir, simmer, and 40-ish minutes later, we ate. Easy. Tasty. DONE.

Foster Farms® Simply Raised chicken is a great choice for health-conscious families. I personally care about what’s in our food, so I feel comfortable knowing that their fresh chicken products are 100% natural and locally grown with no added antibiotics, sodium, steroids, preservatives, hormones, or any of that other stuff that is commonly used in poultry. I used two, fresh thin-sliced breast fillets in this recipe and it was just right!

Hearty Chicken, White Bean and Kale Chili

 

Ingredients:

  • (2) Foster Farms® Simply Raised Thin-Sliced Chicken Breast Fillets
  • 2 cups water
  • 2 cups chicken broth
  • 2 cans white beans, drained
  • 2 cups kale
  • ½ medium yellow onion, diced
  • 1 clove garlic, minced
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. oregano
  • ½ tsp. cumin
  • 1 bay leaf

 

Ok, I know that it looks like a lot of ingredients, but it’s really not! Half of the list is spices and flavor. Most of your time will be spent prepping and chopping, only taking me 20 minutes to do so.

In a medium sized pot, bring 2 cups of water to a boil. Cut up your chicken breasts into a few pieces and drop them into the water. Allow them to boil for 15 minutes, or until thoroughly cooked. While you’re waiting, chop, dice, and measure remaining ingredients, set aside.

 

To thicken your soup, pulse one of the cans of white beans in a blender to make it a puree. When the chicken is finished, remove from heat, drain the water into a large pot and shred the chicken. Add 2 cups chicken broth to the water in the large pot and bring to a boil.

Add all remaining ingredients, the shredded chicken, white beans, white bean puree, onion, garlic, kale, salt, pepper, oregano, cumin and bay leaf. Stir to combine and lower heat, simmer for 20 minutes. Remove the bay leaf, top with optional cheese and serve!

“Mom, can you make this more often?!” My son exclaimed after tasting the chili. He really made me smile, at least I know that I am doing something right! I was happy with how this turned out, a nice taste alternative to regular chili and I know my family is eating the best ingredients when it’s homemade.

  • I’m not a fan of ground meat in my chili, so this is perfect for me. Shredded chicken is my weakness, and kale is soup is delicious.

  • I like Foster Farms chicken and buy it at Walmart marked down all the time. I like your very healthy Chicken Soup. I like the white beans and I will have to make this for dinner this week.
