Coconut Birds Nest Cookies Recipe

Coconut bird nests cookie recipe ingredients:
- shredded coconut
- sweetened condensed milk
- Easter mini eggs (the perfect coconut nest candy)
You’ll also need:
- 12-ct. muffin pan
- Large mixing bowl
Step 1: Combine the bird nest ingredients
Preheat your oven to 350 degrees. Lightly grease a standard-sized 12-count muffin pan and set it aside.
In a large mixing bowl, combine the shredded coconut and sweetened condensed milk. Stir the mixture enough to be sure the coconut is completely coated and moist.
Step 2: Add the coconut mixture to the muffin pan
Spoon your coconut mixture evenly into each of the 12 cups in the muffin pan. Press the coconut down in the center of each cup to the bottom and onto the sides to form the nest area.
Step 3: Bake coconut macaroon nests, cool, and fill with treats!
Bake your coconut cups for 12-15 minutes, or until the coconut cookies are completely baked and the tops and edges are crispy brown. Allow them to cool completely, for about 30 minutes, and fill them with your chocolate mini Easter eggs.
Make sure that you allow your coconut bird nests to cool and that you don’t add your chocolate eggs too soon or they will all melt!

Coconut Birds Nest Cookies Recipe for Easter
Equipment
- 1 12-ct. muffin pan
- 1 large mixing bowl
Ingredients
- 1 14-oz. bag of shredded coconut
- 1 14-oz. can of sweetened condensed milk
- Easter chocolate mini eggs or jelly beans
Instructions
- Preheat your oven to 350 degrees. Grease standard sized 12-count muffin pan, set it aside.
- In a large bowl, combine the coconut and sweetened condensed milk. Stir enough to be sure the coconut is completely coated and moist.
- Spoon mixture evenly into the muffin pan, dividing between all 12 muffin cups. Press coconut down to the bottom and onto the sides to form the nest in the center.
- Bake coconut cups for 12-15 minutes, or until the coconut cookies are baked and the tops are crispy brown.
- Allow them to cool completely, for at least 30 minutes. Gently remove from muffin pan and set on a serving plate. Fill the cups with your mini Easter eggs.
