Fun With Fruit: Orange Strawberry Compote in an Orange Cup

 
I visited the Hyatt Mission Bay last year and previewed their new organic kids menu, which is available in most Hyatt hotels nationwide. They gave us a healthy cooking demo where they created these cute little fruit salads, in orange cups!

 

Orange Bowl Strawberry Compote Fruit Salad

 

No need to fill up on sugary and artificial snacks. This Orange Strawberry Compote was made with fresh fruit, honey and mint, that’s it! This is such a cute way to serve a fruit salad, great presentation for parties and kids love having their own individual orange.

 

Orange Strawberry Compote in an Orange Cup

 

Ingredients:

  • 6 large oranges
  • 8 fresh strawberries
  • 1 tbsp. honey
  • mint leaves

 

To make the orange juice: Squeeze the juice of two of the oranges into a bowl, stir in the honey and refrigerate.

To make the orange bowl: Of the remaining 4 oranges, cut off the top third of each, set aside. These will be the “lids”. Next, make a level cut on the bottom of the larger orange cup and carefully cut out the flesh from inside the orange.

 

To make the fruit mix: Take the flesh you took out of the orange in the lest step and segment the oranges into slices, put them in a mixing bowl. Slice up the strawberries and add them to the bowl, stir gently to combine.

 

Put it all together: Take your fresh orange juice and combine with the strawberry and orange fruit mix. Set your hollowed out oranges onto serving plates and scoop in the fruit mixture. Once complete, pour remaining juice over each plate, garnish with a sprig of mint and serve. You can use the orange tops as “lids” and cover the orange, or set on the side of the plate as garnish.
