I don’t know about you all, but I am a mama that is always busy and on the go. Being pressed for time, I look to easy recipes for dinner solutions that are quick, delicious, healthy and can yield enough for leftovers! My crock pot slow cooker is one of my best friends at dinner time, and since it’s been so cold out, I recently tried a warm, filling black bean chicken chili that my family loved.

My latest trial in the kitchen the other night was a fun twist on traditional chili. Perfect comfort food for cold nights and hungry families, this hearty chicken chili with beans dish fills up tummies, southwestern style! It’s packed with protein and veggies galore, we really enjoyed it and I know you’ll love it, too. Here’s my slow cooker black bean chicken chili recipe…

Let’s get this awesome crock pot southwest chicken chili started! First, combine the chicken breast, onion, and garlic in the bottom on the slow cooker. Sprinkle a little salt and pepper over the top of the mixture.

Add ingredients to the slow cooker

Next, you’ll add the diced tomatoes, chicken broth, black beans, kidney beans, corn, and avocado to the slow cooker. Stir gently and add salt, pepper, cumin, and chili powder. Mix well and cover, fire up your slow cooker and set it for 3 hours on high heat. Now you can literally walk away! You have 3 whole hours of free time. Sort of. That is unless you are all caught up with work, laundry, dishes, cleaning, child-rearing, etc.

Once it’s finished, give the southwestern chicken and black bean chili recipe a stir and ladle into soup bowls. Finally, garnish with cheese, cilantro, and sour cream, if you dare. Oh gahhhh it was amazing!

Ingredients
  

  • 1 lb. chicken breast diced
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 1 28oz. can of diced tomatoes
  • 2 cans chicken broth
  • 1 15oz. can black beans drained
  • 1 15oz. can kidney beans drained
  • 1 15oz. can corn drained
  • 1 avocado cubed
  • 1/2 cup cilantro diced
  • 2 tsp. cumin
  • 2 tsp. chili powder
  • salt and pepper to taste
  • Garnish sour cream, shredded cheddar and jack cheese, diced cilantro optional

Instructions
 

  • Combine the chicken breast, onion, and garlic in the bottom on the slow cooker. Sprinkle a little salt and pepper over the top of the mixture.
  • Add diced tomatoes, chicken broth, black beans, kidney beans, corn, and avocado to the slow cooker. Stir gently and add salt, pepper, cumin, and chili powder.
  • Mix well and cover, set your slow cooker for 3 hours on high heat.
  • When it’s finished cooking, give the soup a stir and ladle into soup bowls. Garnish with your favorite toppings - we love cheese, cilantro, and sour cream

  • I followed recipe except for I only did 15 oz of tomatoes because that’s what I had. Threw probably a quarter cup of chicken broth in to make up for it liquid-wise. Honestly, mine doesn’t look like nice broth in picture- mine looks like a bunch ingredients in water. Doesn’t taste like much. Not gross. But not good.

    • Make sure you use the proper amount of tomatoes and you can replace the water with chicken broth (I usually do, I updated this in the recipe). Also, the salt and pepper are not measured, it is to suit your taste. If you don’t think it tastes like much, you are welcome to season to your liking.

  • If you use regular canned you can add a big potato to absorb the salt and throw it in compounds afterwards.
