How to make watermelon salad with feta and mint
What I love about this salad, other than the fact that it tastes amazing, is that it is so easy to make! First, prep all of your ingredients according to the instructions in the recipe below. Grab a large mixing bowl and combine watermelon (1/2-inch cubes), arugula, cherry tomatoes, and sliced red onion.
Add your balsamic vinaigrette (we love Brianna’s creamy balsamic dressing) and gently toss all ingredients together until lightly coated.
Next, transfer the watermelon and arugula salad mix to a large serving bowl. Add chopped mint on the top of the salad. Finally, sprinkle feta cheese crumbles over the top of the salad and serve!
Watermelon Arugula Salad Recipe with Feta
- 2 cups watermelon 1/2-inch cubes
- 2 cups arugula
- 1 cup cherry tomatoes halved
- 1 tbsp red onion thin sliced
- 2 tbsp balsamic vinaigrette
- 1 tbsp feta cheese crumbled
- 1/2 tsp fresh mint chopped
- In a large mixing bowl, combine watermelon, arugula, cherry tomatoes, and sliced red onion.
- Add balsamic vinaigrette dressing and gently toss all ingredients together until lightly coated.
