It’s a miracle if my kids get up the first time I wake them, which means we tend to be racing out the door 4 out of 5 school days per week. I am in the process of installing a family command center so that we are better organized and have everything we need under control in one spot. We pre-pack lunches and pick out our clothes before bed, so the only thing left is to streamline breakfast!

What I love about this quick and easy breakfast idea is that they have fresh fruit, I can make them on a Sunday and they’ll last for a few days, and they are delicious! Easy Make Ahead Blueberry Pancake Bites

Ingredients:

  • 2 cups pancake mix (I love Krusteaz pancake mixes, fluffy pancakes that are super easy to make)
  • 1 1/3 cups water (follow package directions, they may differ)
  • 1 cup fresh blueberries
  • 1 tbsp. maple syrup
  • splash of vanilla

When you make pancake bites with pancake mix, it makes it so much easier of a recipe! To start, pre-heat your oven to 350 degrees, measure out all ingredients and get ready to start this easy breakfast idea. Lightly grease the cups of a 12 count muffin pan, set aside. In a mixing bowl, add pancake mix, water, maple syrup and vanilla extract and stir until pancake batter is nice and smooth. Add blueberries, gently folding them into the batter until they are all coated.

Pour pancake batter evenly into each muffin tin cup and bake at 350 degrees for 16-20 minutes. Pancake bites should be brown around the edges and slightly brown on the tops of each pancake. Feel free to do a toothpick test to make sure they are all finished in the middle.

Allow your blueberry pancake bites to cool, then gently loosen each one and pop them out. The result: delicious, fluffy blueberry pancakes that are ready to take with you to go! They re-heat well, I warm them for about 30 seconds in the microwave each morning, add a little more maple syrup to the bottom of a zipper bag, and put the pancake bites inside for dipping. My kids love it!

  • I fed a hole plan of these to my dog and now she’s puking a bunch around my house. I’m trying to keep from puking on the carpet. She did once behind the tv (silly animals). They look good and she seemed to like them but are blueberries bad for dogs? I wonder if I could make them with carrots instead?

    • Sugar in the mix could be bad, so could the wheat for your dog. So could the fact that your fed a dozen (whole pan) of these to your dog. Blueberries are not bad for dogs. Maybe look up “dog safe” recipes versus a recipe intended for human consumption?

  • Ji made these muffins with bisquick mix and added 2 eggs and a cup of milk per their instructions. I then proceeded to add the syrup, vanilla and blueberries. I had to bake the muffins about 30 minutes to get a little browness on the top. They were very good but my husband said to add a little sugar to the batter next time, to make them sweeter. I will make again.

    • Mine didn’t really brown on the top either, mostly on the sides because I use a metal pan. As long as they are cooked through, they should be fine. Mine were just sweet enough with the Krusteaz pancake mix, but go ahead and add some sugar and let me know how it turns out!

  • I am going to make these as the breakfast garnish for the residents at the assisted living residence I work @. I think they will love them.

  • I made these just for that reason quick and on the go. ABSOULTELY AMAZING!!! Easy and my kids love it!!! Any other recipes please share. I make them the night before while I’m making dinner If you haven’t tried it try it!!

  • I just made this tonight for my 3 and 2 year old. They gobbled them up! This is exciting as I have picky eaters and work full time and this was so easy to make. I have extra for tomorrow morning. They’ll take them with them to school. I also plan to make them ahead during the week for an on-the-go breakfast. Anyone have any suggestion on how to prevent the blueberries from bursting? Half the muffins had purple on the bottom. Still yummy though (I ate two myself).

    • I coat the blueberries with a squeezed lemon and some sugar, just a little goes a long way! Helps them from sticking or bursting. 🙂

  • I want to make these Easy Make Ahead Blueberry Pancake Bites for me and the kids. I have been wanting to make a blueberry recipe for muffins and this one is easy. Looks delicious!
