My family loves a good warm breakfast to start our day, and this thyme sweet potato and scrambled eggs hash recipe is my new favorite! What I love most about this recipe is the flavor – sweet potatoes, thyme, garlic, onion, and fresh eggs go surprisingly good together. Who knew that cooking healthy ingredients could taste so good?!
I eat eggs often, and I’ve added these fresh, hormone free eggs from the happy egg co. as my egg of choice. They raise their hens on huge, 8-acre family run free range farms. You’ll be able to tell the difference by their beautiful brown egg shells, and the deep golden yolk color inside the egg. Thyme Sweet Potato and Scrambled Eggs Hash Recipe
makes 4 servings
Ingredients:
- 6 the happy egg co. eggs
- 2 tbsp. extra virgin olive oil
- 2 cloves of garlic, minced
- 1/2 cup chopped onion
- 2 cups diced sweet potato
- 2 cups chopped kale
- 1 tbsp. fresh thyme, minced and divided
- salt and pepper
- avocado (optional garnish)
Warm olive oil to medium heat in a large skillet. Add garlic and onion, saute for 3-5 minutes or until slightly brown. Stir in sweet potato, kale, and half of the fresh thyme. Season with salt and pepper as desired, mix well and allow the mixture to cook for 3-5 minutes. While the sweet potato mixture is cooking, lightly scramble your eggs in a separate pan and set aside.
Stir the mixture once more, making sure everything is well combined. Turn the heat to low, cover, and simmer for 10 minutes, or until potatoes are done. Top with scrambled eggs, the remaining thyme, and avocado slices.
