My family loves a good warm breakfast to start our day, and this thyme sweet potato and scrambled eggs hash recipe is my new favorite! What I love most about this recipe is the flavor – sweet potatoes, thyme, garlic, onion, and fresh eggs go surprisingly well together. Who knew that cooking healthy ingredients could taste so good?!

Thyme Sweet Potato and Scrambled Eggs Hash Recipe
makes 4 servings
Step 1: Prep the sweet potato hash
Let’s get started with this sweet potato egg skillet! Warm the olive oil to medium heat in a large skillet. Add garlic and onion, saute for 3-5 minutes or until slightly brown and fragrant. Stir in sweet potato, kale, and half of the fresh thyme. Season with salt and pepper as desired, mix well, and allow the mixture to cook for 3-5 minutes.
Step 2: Scramble the eggs separately
While the sweet potato mixture is cooking, lightly scramble your eggs in a separate pan and set them aside.
Step 3: Cover the sweet potatoes and simmer
Stir the sweet potato hash mixture once more, making sure everything is well combined. Turn the heat to low, cover, and simmer for 10 minutes, or until potatoes are done.
Step 4: Top with scrambled eggs & serve
Top with scrambled eggs, the remaining fresh thyme, and avocado slices. Divide this amazing breakfast egg skillet onto 4 plates and serve!
Thyme, Sweet Potato & Scrambled Eggs Hash Recipe
Ingredients
- 6 eggs
- 2 tbsp. extra virgin olive oil
- 2 cloves of garlic minced
- 1/2 cup chopped onion
- 2 cups diced sweet potato
- 2 cups chopped kale
- 1 tbsp. fresh thyme minced and divided
- salt and pepper
- avocado optional garnish
Instructions
- Warm the olive oil to medium heat in a large skillet. Add garlic and onion, saute for 3-5 minutes or until slightly browned. Stir in sweet potato, kale, and half of the fresh thyme. Season with salt and pepper as desired, mix well, allowing the mixture to cook for 3-5 minutes.
- While the sweet potato mixture is cooking, lightly scramble your eggs in a separate pan, season them lightly if desired, and set them aside.
- Stir the sweet potato hash mixture once more, making sure everything is well combined. Turn the heat to low, cover, and simmer for 10 minutes, or until potatoes are done.
- Top skillet with scrambled eggs, the remaining fresh thyme, and avocado slices. Divide this breakfast hash onto 4 plates and serve.
