I literally make these muffins a few times a month. I tend to make these over our favorite banana bread recipe because they take half of the time and make a smaller batch, which we prefer. Sometimes we make these mini banana cinnamon sugar muffins, which are great to pack in school lunch boxes.

Ingredients needed for these easy banana muffins:
- an overripe banana, mash it!
- semi-sweet chocolate chips
- eggs
- sugar
- all-purpose flour (I always use a gluten-free flour substitute)
- salted or unsalted butter
- baking soda
- cinnamon
You will also need:
- 12-count muffin tin
- non-stick spray -or- muffin liners
How to make a banana muffins using one banana
Ok – it’s time to get ready for the best banana chocolate chip muffin you’ve ever had! First, preheat your oven to 350 degrees and line or grease a 12-count muffin tin.
In a large mixing bowl, combine the softened butter and sugar. Cream the ingredients together until they are nice and well-mixed. Next, add the rest of the wet ingredients; the ripe, mashed banana and egg.
Add remaining ingredients & bake in the oven
Now we will add the flour, baking soda, salt, and cinnamon to the bowl. Gently stir all of the dry ingredients together into the mixture until they are just combined. Do not overmix the batter.
Fold in your chocolate chips (we love these semi-sweet chocolate chips from Nestle) and scoop the batter into your greased/lined muffin tin. Fill up each cup about 2/3 of the way full, and add some more chocolate chips to the top of the muffins if you love them a little extra sweet as we do!
Easy Banana and Chocolate Chip Muffins Recipe
Equipment
- 1 12 count muffin tin
Ingredients
- 1/4 c butter softened 1/2 stick
- 1/2 c sugar
- 1 ripe banana, mashed
- 1 egg
- 7/8 c flour a little less than 1 cup
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1/8 tsp cinnamon
- 1/2 c semi-sweet choc chips plus a little extra for the tops
Instructions
- Preheat the oven to 350 degrees. Line or grease your 12-count muffin tin.
- In a large mixing bowl, combine the softened butter and sugar and cream the ingredients together. Then, add the mashed banana and egg and mix all ingredients.
- Add flour, baking soda, salt, and cinnamon to the bowl. Stir all of the ingredients together until they are just combined - do not overmix.
- Add semi-sweet chocolate chips to the bowl and fold them in gently. Scoop the batter into your greased/lined muffin tin, filling each cup about 2/3 of the way full.
- Add additional chocolate chips to the tops of the batter of each muffin.
- Bake muffins for 22-25 minutes, or until golden brown on the tops and thoroughly done in the center. Allow 8-10 minutes for the banana muffins to cool, then carefully remove each muffin from the tin and serve warm.
Fun banana muffin recipe variations:
- You can use gluten-free flour as a substitute to regular flour. Just make sure it is a 1-to-1 substitute, I always use this.
- Cake flour is another good substitute. Bakery muffins often come out better because they use cake flour. It is a finer grind than regular all-purpose flour, making the muffins softer.
- Try stirring some of these delicious additions to your muffin batter – enhance your chocolate chip banana muffin recipe with walnuts, pecans, cranberries, mini chocolate chips or white chocolate chips (omit the semi-sweets), and even coconut.
