Who’s enjoying the summer sunshine?
We definitely have been! Although we’ve had our fair share of junk food, I have been trying to make sure that we’re staying on track with eating healthy foods. If you’re looking for a fresh, healthy and gluten free salad to bring to a summer event or serve to family and friends in your backyard, try this fresh corn, avocado and red quinoa summer salad recipe!
In staying with the summer fresh theme, I put together a salad using some ingredients that I always keep on hand: mixed greens, red quinoa, and feta cheese. Fresh corn on the cob and avocado are ripe and ready during the summer months, so go ahead and put it all together to create a tasty and healthy treat!
Fresh Corn, Avocado and Red Quinoa Summer Salad Recipe
Ingredients:
- 1 ear fresh corn on the cob, cooked
- 1 cup red quinoa, cooked
- 1 cup mixed greens
- 1/2 avocado, cubed
- 1/2 cup fresh cilantro
- 1/4 cup feta cheese
- 1/4 cup red onion, sliced thin
- 2 tbsp. extra virgin olive oil
- salt and pepper to taste
Ok, so all you really do is prep the veggies according to the ingredient list above, cut the corn off of the cob, you don’t want the cob in the salad! Combine all ingredients in a large bowl, toss until everything is coated with olive oil, and that’s it! This is the easiest summer salad recipe I have ever made – fresh, meatless, and really good.
This is a super easy salad that makes about 4 cups worth, so go ahead and double the recipe if you need to feed a larger family or group. This gluten free salad is perfect to serve at a function, we’re having our annual family beach barbecue soon and I am definitely bringing this salad!
Make a few adjustments to please your palate: For a vegan or dairy free salad, leave out the feta cheese. Remove the red onions for your onion-challenged kids.
