Who loves a good, healthy homemade salad recipe packed with protein, vegetables, and whole grains? I am sure we all do, and I am so thrilled about this tasty southwest black bean and corn salad!
I really try to focus on putting together healthy meals for my family as much as I possibly can. We love this chicken and black bean chili, so I knew that a side salad with similar ingredients would be perfect. It is important to me to cook with fresh fruits, vegetables, grains, and proteins, and adding beans and tasty southwestern quinoa to our meals is a great way to do this!

Step 1: Combine southwest corn salad ingredients
This might be the easiest salad, ever. To get started with this southwest corn salad recipe, combine black beans, corn, quinoa, tomatoes, and cilantro in a large bowl. Mix well and set aside.
Step 2: Make the lime and garlic dressing
Next, in a smaller bowl, combine lime juice, garlic, onion, and spices. Stir until well combined and add the lime juice mixture to the large black bean bowl. Mix it all together and you’ve got a healthy and delicious salad!
Southwest Black Bean and Corn Salad
- 1 16 oz. can S&W Beans organic black beans
- 1 16 oz. can corn
- 1/2 cup red quinoa cooked
- 1/2 cup cherry tomatoes halved
- 1/4 cup cilantro diced
- 1 whole lime juiced
- 1 clove garlic minced
- 1/4 cup onion minced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. cumin
- 1/8 tsp. chili powder
- In a large bowl, combine black beans, corn, quinoa, tomatoes, and cilantro. Mix well and set aside.
- In another small bowl, combine lime juice, garlic, onion, and all spices. Stir until well combined.
- Add the lime juice mixture to the black bean mixture in the large bowl. Mix it all together and serve.
