One thing I have never tried in the past is to make a poke cake. They sound so interesting (like OMG look at this death by chocolate cake) and I love an easy dessert recipe. With the tons of strawberries we always get when we go strawberry picking in San Diego, I had to try making it. How do you make strawberry poke cake?
Ingredients you’ll need
- White cake – either a boxed cake mix or homemade
- All of the ingredients called for on the cake box
- Strawberries
- Sugar
- Vanilla
- Whipped topping – like a tub of Cool Whip
You will also need:
- 9×9 baking pan
- Mixing bowls
- A blender or food processor (this mini-blender is great for sauces and purees)
- Wooden spoon with a large rounded end (or something similar for poking holes)
Step 1: Bake your white cake
Grease or line a 9×9 pan and bake the cake according to the instructions on the box. Be sure to find one that provides a recipe for your 9×9 pan. If you’d like, you can make your cake from scratch. We are a gluten-free household so I always do this. Try this simple homemade white cake recipe.
Step 2: Prep the sweet strawberry filling
While the cake is baking, prep your strawberry filling. Wash, hull, and dice your strawberries and add vanilla. Puree until liquified, then add sugar and pulse once more to blend it thoroughly. This filling is actually a pretty easy strawberry puree that you can make in a blender or food processor. Leave this mixture out at room temperature.
Step 3: Poke holes in your cake
Remove the cake from the oven and give it about 5-10 minutes to cool. Using the rounded end of a wooden spoon or something similar in size, poke holes all over the cake, making sure to get all the way down to the bottom of the pan. Holes should be around 1/4-inch in size. Don’t skip any spaces – the more, the merrier!
Step 4: Dress it up with strawberry filling and cream
Next, grab that amazingly red strawberry and sugar puree and pour it evenly all over the cake. Make sure to fill up all of the holes and cover the entire top of the cake. Cover and refrigerate for about 20-30 minutes, remove, and spread your whipped topping all over the top of the cake. Slice into 9 pieces, add a cute little strawberry slice on the top for garnish, and serve. Now you have a strawberry cream poke cake!

Equipment

- Wooden spoon with a large rounded end
Ingredients
- 1 box of white cake or make yours from scratch
- The ingredients called for on the cake box - eggs oil, milk, butter, etc.
- 1 cup fresh strawberries
- 1/4 tsp. vanilla
- 1/2 cup sugar
- 8 oz. whipped topping
Instructions
- Bake your cake according to the box's instructions. We used a cake recipe from scratch that fit a 9x9 pan, so make sure your cake box has instructions for this size pan.
- Wash, hull, and cut up your strawberries. In a blender or food processor, add strawberries, and vanilla. Blend until nicely pureed.
- Add sugar to the strawberry puree and pulse once more. Leave this mixture out at room temperature while the cake is baking.
- Remove cake from the oven and allow 5-10 minutes to cool. Using a large wooden spoon or another similarly shaped instrument, poke random holes all over the cake. Pour strawberry mixture all over the top of the cake, making sure it gets into all of the holes and covers the entire top of the cake. Cover and refrigerate for 20-30 minutes.
- Remove from the refrigerator and spread whipped topping over the cake. Cover and refrigerate until you are ready to eat it. Cut into 9 square slices, top each with a fresh, sliced strawberry, and serve!
