We love love LOVE a good, warm and hearty soup recipe. If you’ve been around here for a while, you may have seen that we have some really good soup recipes that we love sharing with you all. Make an easy soup recipe with leftover turkey
Now I don’t know about you all, but we always have a bunch of turkey left after our Thanksgiving dinner and we usually end up throwing it out after a couple of days. This year, we decided to strip the carcass and freeze the rest of the turkey meat for future use. Why didn’t we ever do this before???
This recipe is just like a chicken noodle soup, with turkey meat, which makes it a great way to use up some of that leftover turkey you have from your Thanksgiving feast! Also, this recipe is easy to make and takes about 30 minutes from start to finish. No need to use the entire turkey, we make this turkey soup recipe without the carcass for a quick meal.
Easy Homemade Turkey Noodle Soup Recipe
This healthy homemade turkey noodle soup recipe is easy to make, delicious, and nutritious too. Make sure you freeze all of the leftover turkey that you can because your family will probably be asking you to make this over and over again.
Turkey noodle soup ingredients list:
- Olive oil
- Vegetables – onion, celery, carrots, garlic
- Chicken broth
- Water
- Spices – parsley, thyme, oregano, salt, pepper
- Turkey (frozen or fresh, you can also use shredded chicken)
- Pasta noodles (we used rotini, but egg noodles are pretty popular, too)
How to make homemade turkey vegetable soup
First, you’ll heat the olive oil in a stockpot over medium heat on the stovetop. Add diced onion, celery, and carrots and stir continuously to soften them for about 4-5 minutes. Next, stir in the garlic and add the cans of chicken broth and water. You can quickly and easily measure the water directly in one of the empty cans. Turn the heat up to medium-high, bringing the soup to a boil.
Add spices & turkey meat to the pot
Then, add your spices to the vegetables and broth. Add 1 tablespoon of parsley, thyme, oregano, salt, and pepper and stir to combine all ingredients. Note: I used dried spices for this easy recipe – they were already in my pantry. You can definitely use fresh parsley, thyme, and oregano, and even add a bay leaf if you have one.
When the soup is at a rolling boil, carefully add the turkey and pasta noodles. Stir thoroughly to combine all ingredients, turn down the heat to a low setting, cover the pot, and simmer for about 10 minutes. When the soup is finished, ladle it into bowls and top with a sprinkle of the remaining parsley. The finished result is magnificent!
Homemade Turkey Noodle Soup Recipe
Ingredients
- 1 tbsp olive oil
- 1 cup onion diced
- 1 cup celery diced
- 1 cup carrots sliced
- 1 tbsp garlic minced
- 4 cans chicken broth 56 oz.
- 1 can water 14 oz.
- 1 tbsp parsley dried (or fresh) + 1/2 tsp
- 1 tsp thyme dried
- 1 tsp oregano dried
- 2 tsp salt
- 2 tsp pepper
- 1 lb shredded turkey fresh or frozen
- 2 cups pasta egg noodles are a favorite, we used rotini
Instructions
- Heat olive oil in a stockpot over medium heat. Add onion, celery, and carrots and stir to soften for about 4-5 minutes.
- Stir in the garlic and add chicken broth and water. Turn the heat up to medium-high, bringing it to a boil.
- Add 1 tbsp. parsley, thyme, oregano, salt, and pepper, and stir to combine all ingredients.
- When the soup is boiling, add turkey and pasta noodles. Stir thoroughly, turn down the heat, cover, and simmer for about 10 minutes.
- Ladle into bowls and top with a sprinkle of the remaining parsley.
