Have you ever wanted to make something sweet without having to leave the house? Maybe just a small dessert or sweet treat using ingredients you already have in your pantry? Well, I had the same dilemma this weekend and I made it happen with this easy recipe for small-batch cookies!

I wanted to make dessert after dinner, but I was badly in need of a trip to the grocery store so I couldn’t make anything fancy. I also did not want to make a huge cake or a batch of 1,000 cookies, there are only 4 of us and we definitely do not need prolonged sweets in our house!

I was able to tweak a cookie recipe using fewer ingredients to make it simple, yet super tasty! This recipe makes about 24 cookies, so you can double it if you do in fact want more. These chocolate cookies are nice and crispy on the outside and soft in the center, just the way we like it. Try it out tonight!

Ingredients for these easy chocolate chip cookies

  • Butter
  • White granulated sugar
  • Brown sugar
  • Egg
  • Vanilla extract
  • Flour
  • Salt
  • Baking soda
  • Chocolate chips or morsels

How to make a half-batch of chocolate chip cookies

Preheat the oven to 350°F. Lightly grease a standard cookie sheet or line it with parchment paper. In a large mixing bowl, cream the butter, white sugar, brown sugar, and vanilla together until well mixed and creamy. Then, stir in the egg.

Add dry ingredients to your butter and sugar mixture

Mix the flour, baking soda, and salt together in another smaller bowl. Add the dry ingredients to the creamy batter and mix until well blended and thick to make a nice cookie dough. Slowly fold the chocolate chips into the batter, then spoon small 1-inch balls of batter onto the cookie sheet, spacing them at least an inch apart.

Don’t make your cookie dough balls over 1-inch in size or they will spread too large and run into each other on the cookie sheet when baked!

Baking your small-batch cookies

Bake your chocolate chip cookies for 12 to 15 minutes or until golden brown. I like mine on the chewy and softer side, so I took them out at 13 minutes. If you like yours crunchy, 15 minutes will do. Remove your cookie sheet from the oven and allow them about 8-10 minutes to cool. This recipe ends up making about 20-24 cookies.

Ingredients
  

  • 1 stick butter softened
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 1/8 c. flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 6 oz. bag of chocolate morsels

Instructions
 

  • Preheat oven to 350°F. Line a large cookie sheet with parchment paper.
  • In a large mixing bowl, add butter, sugar, brown sugar & mix until creamy. Then, stir in the egg and vanilla.
  • In a smaller bowl, mix flour, baking soda, and salt together and stir. Add the dry ingredients to the creamy batter and mix until well blended and thick. 
  • Fold chocolate chips into the cookie batter, then spoon small 1-inch balls of batter on to the cookie sheet, spacing them about an inch apart.
  • Bake 12 to 15 minutes or until golden brown. Remove from oven and allow 5-10 minutes to cool before eating.
