Healthy Southwest Black Bean and Corn Salad Recipe with Quinoa
- 1 can S&W Beans organic black beans
- 1 can corn
- 1/2 cup cooked red quinoa
- 1 cup cherry tomatoes, halved
- 1/4 cup cilantro, diced
- 1 lime, juiced
- 1 clove garlic, minced
- 1/4 cup onion, minced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. cumin
- 1/8 tsp. chili powder
This might be the easiest salad, ever. In a large bowl, combine black beans, corn, quinoa, tomatoes, and cilantro. Mix well and set aside.
In a small bowl, combine lime juice, garlic, onion, and spices. Stir until well combined and add the lime juice mixture to the large black bean bowl. Mix it all together and you’ve got a healthy and delicious salad!
