As we await one of my dear friends to have her first child, it was only right that we throw her a nice shower to celebrate. The couple met and had a long-distance relationship for quite a while, and they finally decided to tie the knot! First comes love, first comes marriage, then… you know the rest!
Mini berry shortcake cups
Due to their history, the baby shower theme was travel-related, Baby on Board. My friend was in charge, she chose red, white and blue and assigned me the sweets table. I didn’t want any ordinary bakery cake, nor did I want to have generic-looking stuff that didn’t match. I love to go all out with these events! I perused the internet for so many baby shower ideas and finally came up with an idea to make these Berry Shortcake Cups Mini Parfaits.
Mini Berry Shortcake Parfaits
These little parfaits were the perfect addition to the party dessert table. They were somewhat healthy and were actually a hit! I will admit that they are a little time-consuming, but there’s definitely no need to hire a pastry chef. Plan for about an hour to assemble these.
I displayed these on some cute little suitcases I made to match the theme of the baby shower. They have a great presence!
Ingredients needed for individual shortcake cups
makes 50 parfaits
- 1 large shortcake or angel food cake
- 2 cups fresh blueberries
- 2 cups fresh strawberries
- 1 can whipped cream
- 50 – 2 oz. mini clear tumblers
Step 1: Prepare the berries and shortcake pieces
To get started with these berry shortcake cups, rinse your berries, dry them, cut the strawberries into small pieces, and set them aside. Slice the cake into 1/2 inch thick pieces. There are two cake pieces in each tumbler. Use the bottom of a tumbler as an outline for the small cake piece on the bottom, pressing firmly into a slice of cake. Poke out the circle of cake. Do the same with the top, or the wider part of the tumbler on the other side for the top cake piece.
Step 2: Assemble the mini strawberry shortcake cups
Once you have enough pieces of cake for each tumbler, 50 small and 50 large, you’re ready to put these parfaits together! It’s a layering process, so place 1 small piece of cake, about 4-5 blueberries, the larger piece of cake, then about 8-10 small strawberry pieces, in each tumbler. Refrigerate until it’s almost party time.
Step 3: Top them with whipped cream and serve
Just before guests arrive, set out each mini berry parfait as desired and top with a squirt of whipped cream and a single blueberry. You’ll love serving these, they were a crowd-pleaser for sure!
These individual treats were perfect, very convenient for guests, and ensure that people are not pilling up too much on their plates. Hope yours turn out great!
