Summertime is just around the corner, which means it’s time to take advantage of the longer days, warmer nights, and fresh food with friends and family for lots of fun! I definitely plan to entertain guests this summer, hang out poolside and enjoy plenty of days at the beach.
When hosting a summer soiree, it is important to fill your guests with the best feelings as soon as they enter your home to make them feel welcome, and that includes the food you serve. This pineapple mint salad with fresh fruit is perfect for doing just that!

In the spirit of warmer weather, I was inspired to create a delicious tropical summer menu. With fresh berries, mint, and of course, pineapple, this honey, and pineapple mint salad is the perfect dish to serve in a pineapple fruit boat!

Fresh, whole pineapples are perfect for a number of reasons, but the best way to use them is as the presentation for your food and drinks. Serve this refreshing honey pineapple fruit salad at your next get-together. It’s the perfect cool treat on a hot summer day!
Honey pineapple fruit salad – served in a pineapple bowl!
Ingredients:
- Whole fresh pineapple
- Blueberries
- Strawberries
- Mandarin oranges
- Honey
- Fresh mint
How to make a pineapple bowl
To make your fruit salad in a pineapple boat, first, you’ll have to cut and hollow out the pineapple. Slice it down the middle vertically so that you have two halves from top to bottom as pictured below.
How to hollow out a pineapple half
Next, take one of the pineapple halves and carefully cut the fruit out of the middle, without puncturing the bottom or the sides of the pineapple. We did this by cutting a vertical line down the middle of the pineapple, and another horizontal line across the middle (looks like a plus sign).
Carefully cut around the outside shape of the pineapple, ensuring you are not getting too close to the edge. Once you cut the pineapple in half, you’ll find a decent amount of pineapple juice inside, DON’T DISCARD IT!
Prepare the tropical pineapple salad
Then, in a large mixing bowl, mix honey, mint, and the leftover juice and set aside. Now, cut up the other half of the pineapple, mango, and strawberries into small pieces and mix them into the honey mint mixture, along with the remainder of your fruit. Toss until coated.
Fill the pineapple bowl with honey mint fruit salad
Finally, scoop the fruit salad mixture into the hollow pineapple, and voila! You have a delicious, presentable summer pineapple fruit salad! I really like how this turned out, it tastes great and my kids were all over it.
My favorite part is the presentation. You could also serve this fruit salad on top of a bed of banana leaves and use the smaller pineapples to hold your beverages. Add a little colorful umbrella and you’re all set for summer!

Tropical Pineapple Fruit Salad Recipe with Mint
Ingredients
- 1 whole fresh pineapple
- 1 cup blueberries
- 1 cup halved strawberries
- 1 cup mandarin oranges
- 1/2 cup honey
- 1/8 cup fresh mint chopped
Instructions

- Lastly, transfer the fruit salad mixture from the mixing bowl into the hollowed-out pineapple half and serve.
