Italian Salami Salad Recipe with Kale & Roasted Garbanzo Beans
This is a pretty simple salad to make. All you need are a few minutes and a few ingredients to get started. Here’s how to make an Italian chopped salad with salami…
Ingredients needed for this Italian salad recipe with kale:
- fresh kale
- Italian dry salami
- cherry tomatoes
- S&W canned garbanzo beans
- parmesan cheese
- olive oil marinade* or Italian dressing
Roast the garbanzo beans
First, you will start by roasting the garbanzo beans. Take a shallow baking dish, coat the beans with olive oil, and sprinkle a little salt over all of the beans. Roast them for about 15 minutes or until crispy, stirring occasionally.
Put the Italian green salad ingredients together
Combine the chopped kale, sliced salami, parmesan cheese, roasted garbanzo beans, and Italian dressing in a mixing bowl. Toss until thoroughly mixed, then serve your salad topped with a few cherry tomatoes and an extra sprinkle of parmesan. Garlic bread goes great with this salad; it’s so delicious!
How to make an olive oil marinade
*If you are looking to make an olive oil marinade, combine fresh minced garlic, Italian seasonings, salt, pepper, and a splash of balsamic vinaigrette with a cup of olive oil and let it sit overnight. Yes, you’ll have to do this ahead of time, but it’s so worth it!
Italian Kale Salad with Salami Recipe
Ingredients
- 3 cups fresh kale diced
- 10 slices Italian dry salami diced
- 1 handful cherry tomatoes halved
- 1 cup S&W canned garbanzo beans drained
- 1/2 cup shredded parmesan
- 2 tbsp. Italian dressing
Instructions
- In a shallow baking dish, coat garbanzo beans with olive oil and sprinkle a little salt over all of the beans. Roast for about 15 minutes or until crispy, stirring occasionally. Set aside to cool.
- In a large mixing bowl, combine kale, sliced salami, parmesan cheese, garbanzo beans, and Italian dressing. Toss until well-mixed.
- Top with a few cherry tomatoes and another sprinkle of parmesan cheese and serve.
